I have the Phoenix Contact (overpriced) brand of your new self adjusting wire stripping tool that I like and also this one that I absolutely love (except the price):

It will strip the outer jacket of a sensor cable cleanly without nicking the inner conductors. It even works on the chemical resistant jackets that are tough to strip any other way. If you add that one and it costs less than $175, I will buy one right away because my name brand tool is just about to be worn smooth out.
That price is money in the bank if you've ever used one more than 3 times or spent two hours chasing down a fault due to a nicked sensor wire that was stripped with an inferior tool.
