Hi tommy two tone,
The program will look something like this:
I've set the timer to seconds. You can further add to the program by ensuring that it cannot be decremented below zero. You could also add the feature that if the input is held the count would increment at a given rate.

Below is a rough example of using an up/down counter counter using the current count then copying to use as the setpoint for the timer that is set to minutes.
