Getting a new brew house, it's going to be controlled by a Siemens 200 or 1200, I realize it's easy to integrate a Cmore, but how about pulling the Siemens IO into a DoMore along with the IO in the DoMore rack and writing ladder for it? Thanks

I'm confused. What is doing the control?

Sorry
The Siemens S7-200/1200 will be doing the control of the brewhouse, I would like to add a cmore to allow control when Im in the cellar. Thant part seems straight forward. The issue is I have software for the 1200, but hate Siemens programming. I would like to bring the discrete and analog data into the Domore for future automation using AD IO. I know MODBUS could work but seems like alot of work. Just wondering if there are other ways?

Modbus is probably the most straightforward.

If your impression of Siemens programming is from 200/300/400 (especially 300/400), then I'd have to agree. But the 1200/1500 rock! The "Totally Integrated Automation " tie-in with the HMI using the same software and tags is a bogus fix to a non-problem, just like it is with everyone else, but the PLC's themselves are really really good.
Modbus TCP would be my first thought how to convert a 1200 to being remote I/O for a Do-More. I 've done Modbus many many times with 1200's and 1500's; in fact it's my standard MMI interface as I don't really like the Siemens OI's or the prices (I typically use Idec, they 're way better than C-Mores). I can walk you through making your 1200 into a Modbus/TCP server if you like.
